Brazilian Cheesebread. Makes 60-70.
1. Boil the milk, water, oil, and salt mixture until milk foams.
2. Put the tapioca starch into a bowl and then add the boiling mixture into the bowl. Use a Kitchenaid to mix. Start slow and then get faster.
3. After flour and liquid has fully mixed, alternate adding the eggs and cheese. Mix until it is not lumpy anymore. Dough should be very soft.
4. Using two spoons, drop small balls (1.5" diameter) onto an ungreased cookie sheet.
5. Bake (convection) on 375 for 15-20 mins.
